Micro greens, cherry tomatoes, cucumber, pitted calamata olives & spring onions in a dressing of Dijon mustard, lemon juice & liquid stevia.

INGREDIENTS

 

2 unpeeled zucchini, grated

2 unpeeled summer squash, grated

2 large carrots, grated

1 head broccoli, cut into florets

1 cup shiitake mushrooms, whole or sliced

1 cup organic marinara sauce

4 ounces raw cheddar-style goat cheese, grated

 

METHOD

 

  1. Preheat the oven to 250ºF.
  2. On the stovetop, steam the zucchini, squash, carrots, and broccoli in a steamer and heat the pasta sauce in a saucepan.
  3. When the vegetables are soft, arrange them in a baking dish, topped with the mushrooms and the heated marinara sauce. Sprinkle with cheese and place the whole dish in the oven with the door ajar for 3 minutes, or until the cheese has melted.
  4. Serve hot and enjoy!

INGREDIENTS

 

3 cups coconut water

1/2 tablespoon Namu Shoyu soy sauce or tamari

1/2 teaspoon Celtic sea salt

1 teaspoon sesame oil (optional, just to enhance the taste)

1/2 tablespoon minced garlic

1 tablespoon minced fresh ginger

1 tablespoon diced lemongrass (optional)

2 red bell peppers, thinly sliced on a mandoline

2 medium carrots cut into matchstick slices

2 pieces baby bok choy, finely chopped

Meat of 1 or 2 coconuts, sliced into long, thin strips like noodles

 

METHOD

 

In a blender, combine the coconut water, soy sauce, salt, sesame oil, garlic, ginger and lemon grass. Blend on high until liquefied. Pour mixture over the raw vegetables and coconut strips.

INGREDIENTS

 

1 globe eggplant, sliced into 1/2-inch-thick rounds

Garlic powder to taste

Sea salt to taste

2 ounces goat mozzarella or raw goat cheddar, shredded

 

METHOD

 

Preheat the oven to 400°F. Place the eggplant rounds on a lightly greased baking pan, season with garlic powder and sea salt, and bake for 8 minutes on each side. Top the eggplant with the goat cheese and bake for another 2 minutes, until the cheese is melted. Enjoy!

INGREDIENTS

 

1 pound carrots

1 medium beet

1 tablespoon fresh ginger

¼ teaspoon ground cayenne pepper or fresh serrano chili

 

METHOD

 

Put each ingredient one at a time through the mouth of a high-powered juicer. Pour the juice into a large glass and enjoy!
